Cholesterol, like oil, cannot dissolve in the blood unless it is combined with special proteins named lipoproteins. Without combining with lipoproteins, cholesterol in the blood will become a solid substance inside vessels. The cholesterol produced by the liver into the blood is combined either with very low-density lipoprotein (VLDL) or high-density lipoproteins (HDL). VLDL cholesterol will be metabolized in the bloodstream to secrete LDL cholesterol.

Heart attack and stroke have been associated with high levels of low-density lipoprotein (LDL, or "bad" cholesterol) and low levels of high-density lipoprotein (HDL, also known as "good" cholesterol). Reversing these trends can lower the risk for these and other artery-related diseases.

HDL is the good cholesterol because it can protect the arteries from the atherosclerosis process. It also interferes with the accumulation of cholesterol in the artery walls by the LDL cholesterol particles. The risk of atherosclerosis and heart attacks in men and women is directly related to HDL cholesterol levels.
